    Ricotta Cream with Walnuts Crumble and Radicchio Rosso di Treviso with Orange Syrup in a Glass

    Preparation
    For the crumble topping: mix the butter, flour and the radicchio cut into julienne strips.
    Add all other ingredients without mixing well. Form a ball. Flatten out the ball and grate (over a baking sheet lined with parchment paper). Bake at 175 °C until golden brown. Crumble.
    For the ricotta cream: Sift the ricotta and mix with powdered sugar, cream and grappa.
    For the syrup: add the sugar, glucose, and pectin to the hot orange juice. Bring to a boil, strain and chill.
    For topping No. 1: pour the crumble into a glass. Add a teaspoon of jelly and pour in one layer of ricotta cream. Pour in a layer of syrup.
    For topping No. 2: pour a layer of ricotta cream into a glass. Add a teaspoon of jelly and pour in one layer of syrup. Cover with crumble and garnish with lines of colored isomalt, a mint leaf and serve.
