    Radicchio Rosso di Treviso Heart Fondant with Morlacco del Grappa Cheese

    Preparation Clean and cut the radicchio hearts into wedges. Cut the tips and use for other purposes (such as, for example, in a salad). Season with salt, white pepper and extra-virgin olive oil. Arrange on a baking sheet and bake for about five minutes at 180 °C. Spread out thin slices of ossocollo on a flat surface and gently place a radicchio wedge on top. Wrap and place on a baking dish greased with a little olive oil. Place a thick slice of Morlacco cheese on top of each roll and bake at 160 °C until the cheese melts over the hearts. Arrange the individual rolls in the center of a plate, garnish with toasted flakes of stale bread and a drizzle of extra-virgin olive oil. Serve hot.
