    Focaccia Made with Three Types of Radicchio

    Preparation

    Mix the flour ,water and yeast in a blender at low speed, adding the salt when the dough is half formed. Divide the dough into three parts and add one type of cleaned radicchio cut into slender julienne strips to each part. Knead the dough well and place on separate trays and cover with cellophane. Let sit for approx. one hour at 25 °C.

    Roll out the dough on part of a baking sheet lined with parchment paper. Lay out the other two dough parts beside this, oiling your hands slightly to help with the process. Brush the surface with water brine, extra-virgin olive oil and salt.

    Let rise once again, for as long as is necessary, then bake at 180 °C for about twenty minutes with the valve open.
